500 g potatoes
150 g peas
150 g diced Serrano ham or finely-chopped slices
4 eggs
Olive oil, salt


Quarter the potatoes, drizzle with oil, season with salt
and bake in the oven at 180șC for around 20 minutes.
Break each egg into a square of clingfilm with
a little olive oil and a pinch of salt,
secure well and place gently in simmering water.
Cook for around 4 minutes,depending on how well you
like your eggs done.Sauté the peas with the Serrano ham.
Arrange the potatoes, peas, ham and poached egg
on a plate and season and garnish to taste.
